Review: Cidrerie du Vulcain - La Prémoudière Poiré 2022
We have been in love with Cidrerie du Vulcain ever since we were introduced to their amazing ciders when Jacques Perritaz first started this project many many moons ago in Switzerland.
Most people only think about apples when they look at the word cider but this category actually includes those made from pears. This poiré is exactly that - made using the traditional Guillage technique before a slow and steady fermentation changes the fresh pear juice into a sparkling wonder.
These are typically less acidic than the apple version and for us, they are highly versatile when it comes to food pairing with its delicate white floral tones, fine bubbles, and almost intoxicating almond-frangipane-pear blossom flavours. MT served this with a roast chicken (hand shredded), quinoa and cucumber salad in a light lemon-soy-spring onion-evoo vinaigrette dressing, and it was sublime.
Made from 25 different species of pears grown in Normandy, fully hand harvested and naturally fermented. May we add that it was quite a tasty number too with some toasted baguette dipped in copious amount of tarama ?
