
Champagne Antoine Chevalier
The foundations of Champagne Antoine Chevalier began in 1925 with Guy, Antoine's grandfather and the family's first winemaker. Originally from Vitry-en-Perthois and a farmer by trade, Guy chose the limestone hillsides of Vitry-en-Perthois for his vine plantations. His first plots, "Le Jardin de Meunier" and "Le Bas du Mont de Fourche" are both planted with chardonnay. The subsoil, filled with chalk, is ideal for the cultivation of this noble grape variety as it offers optimal conditions for the development of the vine.
Antoine Chevalier came back to the family's business in 2014 after completing his studies in viticulture and oenology. Having gained significant experiences in various parts of the world, he is convinced that viticulture must be eco-responsible and thus started converting all of his family holdings into organic and biodynamic farming, with immediate cessation of all industrial chemical products, fungicides, herbicides and pesticides.
In the winery, each parcel is vinified separately by Antoine to preserve the unique characters of the different terroirs. A combination of small wooden barrel, ceramic eggs and traditional vats is typically used to provide a balance between freshness, complexity, generosity, mouthfeel, elegance and purity of fruit in all of Antoine's wines. They are aged on lees, without filtration or fining, for ten months or more before they are bottled and aged in the cellar for a minimum of 36 months. The bottles will then spend another 6 more months in the cellar upon disgorgement before they are released to the market.
Antoine currently owns 2.5ha of vineyards - all planted with Chardonnay. Needless to say, all of his single parcel wines are produced in very limited quantities each year. If you love Blanc de Blancs champagnes, you must not miss your chance in grabbing these delicious gems for yourselves.
