
Isabelle et Denis Pommier
Isabelle and Denis Pommier founded this winery in 1990 as a young couple when they took a leap of faith to take over two hectares of their family's vines in the village of Poinchy within Chablis. They set out to restore their ancenstral land slowly but steadily, and took their time to tinker with the vines and wines before their very first debut release in 1994 that earned them multiple awards .
Today, the estate spans approximately 23 hectares (about 10 hectares on contract with grape growers and the rest are estate owned) thanks to the hard work sown by Isabelle and Denis. Their holdings include various plots of Petit Chablis, Chablis and three Chablis Premier Crus of Fourchaume, Côte de Léchet and Troesmes (a sub-parcel within the Beauroy Premier Cru).
The Pommiers are strong believers in sustainable and organic farming, with a huge respect for nature, biodiversity in the vineyards and are avid followers of biodynamics. Almost the entire production is harvested by hand, with strict sorting in the vineyards and at the winery, to ensure that only the best and healthiest grapes are turned into wines. Fermentation is typically spontaneous with indigenous yeasts, and all the wines are raised in stainless steel vats for their Petit Chablis and Chablis, with the exception of certain lieu-dit in Chablis and all the Premier Crus, which see some restrained use of oak in the final finished wines.
Purity and minerality are two cornerstone elements in all of Pommiers' wines, with a slightly more generous flavour profile that proffers power and amplitude on the palate than the typical super lean Chablis. Its crystal clear briny minerality and bright acidity will please even the most picky Chardonnay drinkers. Interestingly, the Pommiers also make a tiny amount of Bourgogne Rouge from the vineyards of Venoy just outside of Chablis that is energetic, fresh, delicate and elegant with really beautiful red fruit structure and a floral/blood orange that is quite compelling.
