Unlike the Z Blanc which is fermented and aged in large, used wood barrels, Croizier's latest release of Caprice du Chameau, which is also a pure 100% Viognier, only ever saw concrete and stainless steel vats in its entire vinification and aging process.
A blend of two vintages (2019 & 2020), this organic and natural Viognier is slightly cloudy with a distinctively brighter, lighter lemon yellow core colour (than the Z Blanc). Quite shy and ungiving at first but with some air, aromas of tart citrus, lemon peel, starfruit and flecks of flint surfaced to the fore. We detected a faint touch of effervescence, and pretty strong lime flavours on the palate, complemented by notes of tart citrus, smoke, mineral and fresh stone fruits. Med+ acid and finish.
Quite a nice drop to pair with fresh oysters, razor clams, poached octopus, vegetarian quiches, burrata and goat's cheese. The wine is, admittedly, pretty tight and taut at the moment, so we do highly recommend that you give it some aeration or breathing time before drinking. This is one Viognier that will unfurl much of its complexity with time, and likely to age beautifully in the cellar!
