What better way to usher in the new year than cracking open some lovely bubbles with family and friends? Here's our first Chinese New Year Specials, featuring a rare vertical trio of 2002, 2004 and 2005 vintages of Champagne Diebolt-Vallois' flagship wine - Fleur de Passion! Made from 100% Chardonnay grown in the Champagne house's own Grand Cru sites, the 2002 (pictured above) Fleur de Passion showed a bright canary yellow core colour, and very very fine bubbles. Intensely perfumed with aromas of vanilla scented cream, white flowers, toasted nuts, ripe pears, spiced apples, toasted brioche, and a touch of butterscotch. On the palate, the wine exhibited bright citrus tones with some ripe stone fruits characters and layers of vanilla beans, citrus peel and mineral tones, supported by a zingy acidity structure and a lovely finish. Smashingly good with some Fine de Claire N°3 oysters, cold crabs and Botan Ebi sashimi!
If you're thinking about gifting this coming Chinese New Year or what to serve at your dinner tables, these Champagnes make great gifts, and would impress even the most difficult-to-please drinkers. The 2004 and 2005 Fleur de Passion are drinking very well as well but all of them can be cellared for another decade easily, if not more, for those who prefer the more distinctive tertiary notes only fully matured Champagne can proffer.
