Crémant du Jura, Domaine de l'Octavin

A decade is a long time to wait but this bottle of "Papageno" Crémant du Jura by Domaine de l'Octavin was worth the wait! Lots of ripe apples, toasted brioche, yeasty and ripe citrus flavours with a really fine mousse and super fine bubbles. If this was blinded, it could well pass off as a Blanc de Blancs Champagne that has seen a little bottle age. Probably drinking at its peak now, this batch of Papageno that was disgorged in 2010 can still age easily for a decade if stored in pristine conditions. But it was so lip-smackingly good with some spicy Sichuan style braised eggplant and deep fried crispy pork yesterday that we have decided to drink them all up whenever we feel like some spicy 川菜 in the future. Too bad there are so few bottles left!
