This is the only white wine made by Domaine Saladin and was originally crafted for Louis Saladin's wife, Annick, who wanted to pair a food friendly white wine with her delicious French countryside cooking in her quaint restaurant called " Le Mazet ". Their daughters, Elizabeth and Marie-Laurence, who took over the winery business from Louis in 2004, continued to chisel and shape this cuvée into the aromatic but textural white Southern Rhône wine we see today.
Composed of six different white grapes (Viognier, Grenache, Clairette, Marsanne, Roussanne & Bourboulenc) that are co-fermented together, which vines also happened to be co-planted, this is usually the first wine to start fermenting naturally in the winery during the harvest but also the last one to complete, some times a little more than two months, in its underground concrete vat.
