A saignée (bleeding) method rosé which was fermented underground in cements tanks with wild yeasts. An elegant, dry, textural and food friendly rosé that shows plenty of grapefruit, tangerine peel, strawberries, blood orange, a touch of chinese liquorice and a slightly phenolic finish. More than just a quaffer, this rosé will work wonderfully with cold flower crabs, lobster bisque, hazelnut studded saucisson and Chinese style steamed pork with mandarin peel.
