This is a fascinating wine that combines the best traits of two noble grape varieties in Champagne. A single vintage cuvée made of 60% Chardonnay & 40% Pinot Meunier (hence the name 60/40), the wine is fermented and raised in a mix of stainless steel vats and small French barrels before aging on lees for 36 months prior to release. We tried a bottle of this with some lightly battered deep fried anchovies and shrimps sprinkled with flaky sea salt with some winemaking friends recently and it was truly sublime!
