A parcellaire Pinot Noir harvested from a single parcel called "Fontaine Dieu" planted in 1987. This still Pinot can only be made when the vintage conditions permit with sufficient sunlight to achieve optimal phenolic ripeness. 100% destemmed before fermenting in burgundian oak barrels (Santenay), and aged in the same barrels for 10-12 months prior to release. One of the tastiest Coteaux Champenois Rouge from the Côte des Bar we found to-date that combines power and elegance seamlessly. Merely one barrel made.
