This single vineyard wine (named after Uncle Paul Saladin), exudes aromas and flavours of dark fruits, dried rose petals, plums and spices with a light layer of ripe tannins. Made from some of the oldest Grenache (60-100yo), and co-fermented with Clairette (a white Rhône variety) in concrete tanks using natural yeasts. Perfect with some Jamon Iberico, crispy five-spice roast chicken, smoked ham and pissaladières!
